Quand je passe devant l’étal du poissonnier j’ai toujours envie de poisson fumé mais je n’aime pas leur goût trop salé. Un petit trempage du haddock dans du lait et hop il devient doux et fondant. J’ai eu envie de marier cette saveur nordique (dans mon esprit !) avec une touche exotique comme les excellents fruits de la passion. Mariage réussi ! L’association est délicate et délicieuse. Par contre, je trouvais la recette un peu légère pour une entrée. Solution : un petit lit de lentilles vertes apporte une consistance intéressante. J’ai gardé un peu de marinade aux fruits de la passion, à proposer au moment du service. Cette recette de tartare de haddock est un régal… Et si vous essayiez ?

Tartare de haddock aux fruits de la passion et lentilles vertes
Pour 4 personnes

• 2 filets de haddock
• 25 cl de lait (pour le trempage)
• 4 fruits de la passion
• le jus d’1 citron vert
• 3 cuil. à soupe d’huile d’olive
• 200 g de lentilles vertes
• sel

Retirer la peau du haddock et le faire tremper dans le lait au minimum une 1/2 heure. Pendant ce temps cuire les lentilles en démarrant la cuisson à l’eau froide (sinon elles deviennent dures) salée pendant environ 20 min.

Préparer la marinade :
Récupérer le jus des fruits de la passion en pressant la pulpe à travers une passette pour éliminer les graines (j’adore les graines des fruits de la passion mais là avec le mélange de lentilles je me demandais à chaque bouchée si le “croquant” venait des fruits de la passion ou de petits cailloux restés dans les lentilles ! c’est 100 % psycho mais du coup pour mon deuxième essai j’ai éliminé les graines). Mélanger avec le jus de citron vert, 2 cuil à soupe d’huile d’olive, quelques tours de moulin de piment.

Sortir le haddock du lait et le couper en petits cubes au couteau. Garder un peu de marinade pour remplir vos petites coupelles et mélanger le reste avec le haddock, laisser mariner au frais pendant 30 min. Égoutter les lentilles, ajouter une cuil. à soupe d’huile d’olive et les laisser refroidir.

Vous pouvez faire une présentation en couches en tassant légèrement une couche de lentilles et une couche de haddock dans un cercle de présentation. Personnellement j’ai eu quelques soucis de tenue de mes couches qui avaient tendance à s’écrouler, si quelqu’un à une astuce…
