Voici la recette que je propose pour participer au concours organisé par les Vins Côtes de Gascogne. Une recette terre-mer qui allie la saveur légèrement fumée kipper, la douceur de la pomme de terre et la terrosité (je ne sais pas quel mot employer pour décrire le goût terreux de la betterave, terrosité ça parle non !) de la betterave, le tout relevé par le léger piquant de la feuille de capucine. Pour faire écho au concours j’aurai aimé servir ces tapas avec un Côte de Gascogne blanc sec, mais je n’en ai pas trouvé au Carouf du coin. Dès que j’en trouve je refais la recette ! J’espère que cette recette vous plaira aussi et qu’elle saura séduire le jury pour le concours.

Toasts de pommes de terre, kipper et beurre rose
Pour 4 personnes

Préparation : 15 minutes
Cuisson : 20 minutes

• 1 kipper
• 6 pommes de terre moyennes
• 1 betterave cuite
• 100 g de beurre
• du poivre mignonnette
• des feuilles de capucines (facultatif)

Faire cuire les pommes de terre dans un casserole d’eau pendant 20 minutes. Pendant ce temps, prélever des filets dans le kipper et les détailler en morceaux. Couper la betterave en morceaux et la mixer avec le beurre. Mettre le mélange dans une casserole à feu très doux juste pour homogénéiser la préparation. Laisser refroidir et garder au frais.
Une fois les pommes de terre cuites, les éplucher et les couper en rondelles. Faire des toasts en tartinant les rondelles de pomme de terre avec le beurre de betterave, ajouter un morceau de kipper, un peu de poivre mignonnette et disposer chaque toast sur une feuille de capucine.

Le kipper ou hareng rouge est une spécialité de Boulogne sur Mer. C’est un grand hareng ouvert en deux, salé et légèrement fumé. A défaut de kipper, pour cette recette on peut utiliser des filets de harengs doux.
