Rien de bien original pour cette recette si ce n’est le mariage très réussi du potiron et de la châtaigne cuite et dorée au four. L’accord est encore plus fin quand on ne mixe pas la châtaigne mais qu’on la concasse simplement (enfin moi personnellement je trouve !)
Velouté au potiron et châtaignes
pour 4 personnes
• 500 g de potiron
• 1 ou 2 pommes de terre
• 1 échalotte
• une noix de beurre
• 1 bouillon cube
• 1/2 litre d’eau
• une vingtaine de châtaigne
• poivre
• persil
Cuire les châtaignes entières dans une casserole d’eau pendant une vingtaine de minutes (elles doivent être tendres). Eplucher et couper le potiron et les pommes de terre en morceau. Eplucher et hacher l’échalote. Dans une cocotte faire revenir légèrement l’échalote dans le beurre. Ajouter le potiron, les pommes de terre, le bouillon cube, l’eau et le poivre et cuire pendant environ 20 minutes (10 minutes à l’autocuiseur). Eplucher les châtaignes et les placer sous le grill. Mixer les légumes pour obtenir un velouté. Servir parsemé de châtaignes concassées et de persil.
La pomme de terre n’est pas obligatoire mais elle donne de la consistance et encore plus de velouté à condition de choisir une variété farineuse. On peut aussi ajouter de la crème fraîche et fouetter le velouté ou encore proposer la crème fraîche au moment de servir.
