Rouleaux de printemps ricotta radis (sans gluten)
Plus d’un an ! Voilà plus d’un an que j’ai délaissé ce blog ! Pourquoi ? Je ne sais pas bien, c’est un peu comme le sport, vous savez quand on a zappé un entrainement, puis deux, pour le troisième on a du mal à se motiver et ensuite la machine est grippée et on trouve toutes les raisons du monde pour ne pas reprendre. Cette recette de rouleaux de printemps attendait patiemment dans les brouillons de mon wordpress depuis le printemps dernier. C’est donc un retour en douceur, les vraies nouveautés seront pour… la semaine prochaine (ou l’année prochaine !)
Pour en revenir aux rouleaux de printemps, je trouve que c’est une invention géniale ! Toute une salade emballée dans un contenant comestible. Pratique, écologique, déclinable à l’envie, … on a pas trouvé mieux pour emmener sa petite salade en balade.
Rouleaux de printemps ricotta radis (sans gluten)
Pour 12 petits rouleaux
• 12 feuilles de riz (quart de rond)
• 125 g de ricotta
• 1/2 botte de radis
• 1 branche de menthe
• 3 càs de câpres
• 12 feuilles de laitue
• Sel, poivre
Préparer la farce. Mélanger la ricotta, les radis coupés en rondelles (réserver environ 3 càs de rondelles), les câpres, quelques feuilles de menthe ciselées et mélanger.
Préparer les rouleaux de printemps. Tremper les galettes de riz dans l’eau chaude et les déposer sur un torchon. Déposer au centre quelques rondelles de radis, ajouter une feuille de laitue, une belle cuillère de crème à la ricotta. Rabattre les côtés et finir de rouler en serrant le tout.
Servir avec une petite vinaigrette à l’huile de sésame ou une sauce soja pimentée.
On peut réaliser ces petits rouleaux de fraicheur avec toutes sortes de crudités (carottes, concombre, choux, …)
